Vegan Cheesey Peasy Rice Bake

This is one of the most crazy moreish meals I have had on my retreats and so it has been begged for so it will be shared.

All veg choices are completely optional, but given the heavy nature of rice it can be really nice to use bright colours, and contrasting colours. Like beets or peas, orange peppers, carrots etc.

For this one lets go green, with broccoil and peas and spinach all in with the fresh precooked white rice, you can also mix it up with different colours there too.

Next you make a vegan cheese sauce

  • 2 cups potato peeled & cubed
  • 1 cup carrots chopped
  • 1 tsp. Dijon mustard
  • 1 tsp. soy sauce
  • 3/4 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. paprika
  • 1/2 tsp. sea salt
  • 3 tbsp. olive oil
  • 1/2 cup water (use water from cooked vegetables)
  • 1/4 cup nutritional yeast flakes
  • 1 tablespoon lemon juice
  • 1 teaspoon tahini paste
  • Some cornstarch to thicken
  • optional vegan cheese to top (virolife isn’t bad)

Cook the potatoes and carrrots for 20mins and then drain and whizz up
