This recipe is after a request for it from a recent retreat. It was very much a last minute idea, due to not having any tomatoes.
Some water, green chillies, onions, coriander powder, salt, oil, cumin powder, fenugreek powder, cinnamon, fennel powder. Fry them together till soft and then put in a blender to make a paste, play with the quanities till you get something you like the taste of.
It goes very well with coconut milk, and then it is up to your imagination what else you add after. I made a sweet potato and chickpea with spainach to add the colour. but you could just as easily go with mushroom and cashews, again I would add a green leaf/veg (like brocolli, or kale) of some kind just to make the colours a little more pretty.
Serve with a nice cauliflower rice with toasted sesame seeds and garlic, black cumin seeds for a completely vegan keto meal.
