Gingerly Butternut Soup

This is quick one for a keto vegan Butternut squash soup which quickly heals all of the bad ideas you may have had over the weekend.

I often like to pretend I am the healthest person in the world on a Monday, well this is one that is so good at creating the pious vibes, that the husband refuses to touch it for fear or butternut blindness (which isn’t a thing, just incase you are keen to believe him!)

Tons of garlic and ginger, a can of coconut and smallish butternut pealed and cut up into 2cm pieces, plus 2 carrots, 2 onions, red pepper. Fry off and then boil in stock with any spices or herbs you fancy, I was making this one to kid friendly, so I add a bit of cider vinger to take the edge off the sweetness. And some thai basil, nigela seeds, the coconut, then I served with mixed seeds
